Key Concepts

Why Food Gets Spoiled

Food gets spoiled because of tiny organisms called germs (bacteria and fungi) that grow on it. When food is left out in the open, especially in warm weather, germs multiply quickly. Spoiled food smells bad, changes colour, and can make us sick. Flies and insects also carry germs to food. That is why we need to protect and preserve food.

Traditional Preservation Methods

People have been preserving food for hundreds of years. Drying removes water from food, which stops germs from growing. Sun-dried mangoes (aampapad), dried fish, and papads are examples. Pickling uses oil, salt, or vinegar to preserve vegetables and fruits. Jams and murabbas use sugar to preserve fruits. Adding salt to food (like making dry fish) is another old method.

Modern Preservation Methods

Refrigeration keeps food cold, which slows down the growth of germs. That is why we keep milk, vegetables, and cooked food in the fridge. Canning seals food in airtight cans or jars so germs cannot enter. Pasteurization heats milk to kill germs and then cools it quickly. Frozen foods are kept at very low temperatures so they last for months.

Food Safety at Home

Always wash fruits and vegetables before eating. Keep raw food and cooked food separately. Cover food to protect it from flies and dust. Check the expiry date on packaged food before eating. Do not eat food that smells or looks strange. Keep your kitchen and utensils clean. These simple steps keep food safe and keep you healthy.
